The invention relates to a method for isolating a sweet substance from plants, in particular, to a method for isolating steviosides from dried plant material. The aim of the invention is to increase the degree of purity obtained from Stevia rebuadiana Bertoni product. This goal is achieved by the proposed method for the isolation of steviosides by extracting dried plant materials Stevia rebuadiana Bertoni with water, treating the extract with strongly acid cation exchange resin and treating with slightly alkaline ion exchanger and drying the eluate, which consists in. that before the treatment with strongly acidic cation exchange resin, the extract is treated with calcium hydroxide at a pH of 8.3 - 11.0, followed by removal of the precipitate formed, and the eluate is filtered before drying.
