The invention relates to a method for isolating a sweet substance from plants, in particular, to a method for isolating steviosides from dried plant material.
The aim of the invention is to increase the degree of purity obtained from Stevia rebuadiana Bertoni product.
This goal is achieved by the proposed method for the isolation of steviosides by extracting dried plant materials Stevia rebuadiana Bertoni with water, treating the extract with strongly acid cation exchange resin and treating with slightly alkaline ion exchanger and drying the eluate, which consists in. that before the treatment with strongly acidic cation exchange resin, the extract is treated with calcium hydroxide at a pH of 8.3 - 11.0, followed by removal of the precipitate formed, and the eluate is filtered before drying.
It is advisable to concentrate before filtering and repeat the treatment with ion exchangers 1-5 times.
After each treatment cycle of the ion exchange resin, filtration and concentration can be carried out.

Example 1.1 kg of dried plant material Stevia rebuadiana Bertoni is extracted with water taken in an amount of 10 l at room temperature. The resulting extract is treated with calcium hydroxide at room temperature and a pH of 8.5 with stirring for 20 hours and then filtered using a fine filter system to remove the precipitate formed. After removing excess water, the resulting clear solution is treated with Dowex 50 W, followed by elution with distilled water, and the resulting eluate is subjected to treatment with weakly alkaline Dowex WGR ion exchanger followed by elution with distilled water. The resulting eluate is subjected to fine filtration. Then the specified cycle of treatment with ion exchangers, which is carried out at room temperature and atmospheric pressure, is repeated three times.

Then, the indicated treatment with ion exchangers, which is carried out at room temperature and atmospheric pressure, is repeated two times. After elution and fine filtration at the end of the last treatment with ion exchangers, the resulting eluate is concentrated to dryness. Obtain 88 g of a product containing 95% pure steviosides.

1. A method of isolating steviosides by extracting dried plant material Stevia rebuadiana Bertoni with water, treating the extract with strongly acidic cation exchange resin and weakly alkaline ion exchange resin and drying the eluate, characterized in that, in order to increase the purity, the extract is treated with calcium hydroxide at pH 8.3 -11.0 followed by removal of the precipitate, and before drying, the eluate is subjected to filtration.
